Kinda a lazy day today, but I figured I should do something constructive. With all the “news” I thought it was a good day for a sweet. I try to find easy recipes that take minor ingredients. Right now I have lots of goats milk and I need to figure out new ways to use it. I have been making feta, but you can only eat it so fast. I will try to do a hard cheese soon, but most recipes call for 2 gallons of milk which takes me awhile to gather.
Today the recipe is caramel! How can you go wrong with that? I anticipated putting in on ice cream, but I may just eat this right it out of the bowl! Oh my gosh this is so good!
Surprisingly, it was super easy too! Here’s what I did.
6 cups of milk and 1 1/2 cp sugar- warm and dissolve in large pot.
Bring to a soft boil and turn off heat..
Add 1/2 teas of baking soda diluted in 1 tablespoon of water and gently stir into milk mixture. Note: this will bubble up so pour slowly and keep stirring.
Bring heat back up to a simmer and cook for 30 min, gently stir and check in another 20 min. Keep doing this until the mixture becomes dark and very large bubbles. When it gets to soft ball stage turn off.
Let cool and jar for a topping
Thats it! If you want a more solid like caramel keep cooking longer.
