What is Water Kefir?

Let's first start with.... what is water kefir? Water kefir is a fermented beverage made from water, sugar, and WATER kefir grains. These grains are a symbiotic culture of bacteria and yeast (SCOBY) that ferment the sugar, resulting in a slightly fizzy, probiotic-rich drink. It's a great alternative to store-bought sodas, which are often loaded with artificial ingredients and excessive sugar. These grains are not the same as Milk kefir grains and can't be interchanged.


Nutritional Benefits of Water Kefir:

Probiotics:

  • Lactobacillus species: These beneficial bacteria are prominent in water kefir and help maintain gut health, improve digestion, and boost the immune system.

How to Make Water Kefir Soda

Ingredients:
  • 1/4 cup water kefir grains

  • 1/4 cup sugar (organic cane sugar, maple syrup, or coconut sugar)

  • 4 cups water (filtered or spring water, avoid chlorinated or fluoridated water)

  • Optional: dried fruit, fresh fruit, herbs, or spices for flavoring

Equipment:
  • Quart-sized glass jar

  • stirring utensil

  • Coffee filter or cloth and rubber band

  • Flip-top bottles for carbonation

Instructions:
  1. Dissolve the Sugar: In a quart-sized glass jar, dissolve the sugar in a small amount of hot water. Once dissolved, add the cool water to fill the jar.

  2. Add the Grains: Add the water kefir grains to the filled jar, but make sure the water is room temperature or cooled down to ensure it is not too hot for the grains.

  3. Ferment: Cover the jar with a coffee filter or cloth and secure it with a rubber band. I put a lid on the jar, but leave it just barely tightened. This is because I have other ferments going in the kitchen and I don't want cross contamination. Let it sit at room temperature (68-85°F) for about 48 hours, out of direct sunlight. The fermentation time depends on the temperature and your taste preference. KEEP AWAY FROM OTHER FERMENTS!

  4. Strain the Grains: After fermentation, strain the water kefir grains from the liquid. The grains can be reused for the next batch.

  5. Flavoring: Transfer the fermented water kefir to flip-top bottles. Add your choice of flavorings such as fresh fruit slices, dried fruit, herbs, a good quality juice or spices and about 1-1/2 tablespoons of sugar. You also could add a good quality juice and skip the sugar as juice usually contains sugar. Seal the bottles tightly.

  6. Second Fermentation: Allow the flavored water kefir to ferment at room temperature for another 24-48 hours. This second fermentation creates natural carbonation, resulting in a fizzy soda. During this time, you want to keep checking your bottles to make sure that they don't build too much pressure. Each day carefully unlock the cap and "burp" the bottle. These bottles can explode so be diligent to check.

  7. Refrigerate and Enjoy: Once the desired level of carbonation is reached, refrigerate the bottles to slow down the fermentation process. Chill before serving and enjoy your homemade natural soda! It will last 1-2 weeks in the refrigerator.

  • Citrus Delight: Add slices of lemon, lime, and orange for a refreshing citrus soda.

  • Berry Burst: Use a mix of strawberries, raspberries, and blueberries for a fruity twist.

  • Ginger Spice: Add fresh ginger slices and a cinnamon stick for a zesty, warming drink.
